You’ll see why in just a second, but do not pick Fishing or Cooking as your 2 permanent Professions. However, if you already have you can use Fishing with Alchemy, but if you combine Fishing and Cooking you can eat what you pull out of the water.
So you see, if you combine Leatherworking with Mining you’re going to leave yourself open to needing addition help all the time. So make sure you pick 2 professions that are complementary.
Also… There are 3 specific professions that can be learned and won’t take up your 2 permanent slots.

Cooking – When you cook your fish you get more health from eating them.
First Aid -You can make bandages to heal up after a battle.
